"A Proper Mess of Smelts"
The bounty of the local Maine waters in January is the noble smelt. These lovely fish are soon to be treated to a golden coating of cornmeal and fried to a delicate crunch by my talented husband. Then they will grace our table in our cozy kitchen and delight us with their delicious wholesome goodness.
